Shelley: Day 8 - Fire it Up!!!
It's almost the weekend! Things are still going great! I went to the gym today and ran 2.5 miles on the elliptical and then lifted weights. I forgot just how much I love the gym. Once I'm there I just want to stay! At my peak of fitness a few years ago I would work out for 2-3 hours a day after work and I really didn't know if I'd still want to. Turns out, yes, yes I do!!! However, with kids it's a little trickier. I had to limit myself to an hour but I really can't wait to go back! So having gone to the gym I burned some extra calories. I probably should have just run for an hour (you burn more calories running) but I want to tone up as well so I only burned 460 Calories.
I've had a serious case of the munchies so I bought some things I can eat with abandon; dill pickles, and watermelon! It literally takes more calories to digest Dill Pickles than they provide and watermelon is very, very low in calories for volume.
I've also found a FABULOUS cook book. It's only simple recipes and everything I've tried so far has been fantastic! I made the Cayenne Chicken with Avocado Salsa for dinner tonight with the Celery and Apply Salad with Pecans. It was all sooooo good!
So, without further ado, here's today's breakdown:

264 Cals 1 Serving Broccoli Chowder with Corn and Bacon
430 Cals 1.25 Servings Cayenne Rubbed Chicken with Lime Avocado Salsa
196 Cals 2 Servings Celery Apple Salad (This was TON of food for very few calories. I actually feel stuffed right now)
55 Cals 1.25 oz Ham NO GLAZE (This was my recovery snack after working out)
84 Cals 4 Hershey's Carmel Kisses (These and the dark choc ones have the fewest cals/kiss)
140 Cals 3 Mandarin Oranges
0 Cals Baby Dill Pickles
Total Calories Consumed Today: 1,437
BMR CALC: 1821-(1,437+100 Cal for random snitching)- 460 for exercise = 741 Deficit (3800 Calories=1lb)
TODAY's TIP: Grill it!!! Want to save calories and keep flavor? The answer, grill, grill, grill!! The recipe for Cayenne Chicken I made today called for 2TBSP of olive oil to pan cook the chicken. To save calories, I just lightly sprayed the chicken with Pam Olive Oil and grilled it. It was fantastic and I think it tasted better for having been grilled. I do the same thing with veggies of all descriptions. I've tried grilling everything from potatoes and carrots, to eggplant and artichokes. (Don't grill Carrots, they burn thanks to their high sugar content;). I usually stick to Zucchini, yellow squash and my very favorite but hard to find Mexican gray squash but just about anything tastes good grilled and you can do it for very few calories.
