Shelley: Day 2 Veggies How I Love Thee!

It's day two and so far so good! I made what turned out to be a seriously yummy Eggplant Rollatini for dinner last night with some grilled chicken. Using my Lose It app I've been tracking my food more closely.

Here is yesterday's breakdown:

1 Low Cal Breakfast Sami, 240 cal
1/4 cup grapefruit juice, 24 cal
2 cups herb blend salad, 20 cal
1 Tortilla, 150 cal
1/2 fresh tomato, 11 cal
1/2 cup cuke, 8 cal
1 Tbsp Red Chili Sauce, 35 cal
1/4 of a Bell Pepper, 13 cal
7 oz of Zucchini, 46 cal
1 serving Eggplant Rollatini, 237 cal (SOOOOO GOOD)
3.25oz of Grilled Chicken Breast, 101 cal
1/2 of a mini York Peppermint Patty, 21 cal
1 Apple, 95 cal
3 TBSP (unpopped) Smart Pop Popcorn, 237 Cal

Total Calories for the Day: 1,267

BMR CALC: 1821-(1,267+100) Cal for random snitching = 454 Deficit (Feeling good!  This is the path I need to be on!)

Today's Breakdown:

1 Low Cal Breakfast Sami, 240 cal
1/4 cup Grapefruit Juice, 24 cal
3 oz Grilled Chicken, 93 cal
6 oz Grilled Zucchini, 40 cal (This is such a great calorie deal!! Yummy and TONS of food.)
1 cup Butternut Squash, 82 cal
1 Bell Pepper, 23 cal
1/2 cup Yellow Onion, 32 cal
1 oz Zucchini, 7 cal (I made shish kabobs)
3 oz, Top Sirloin, 160 cal
1/2 Mini York Peppermint Patty, 21 cal
3 Mandarin Oranges, 141 cal (These were my snacks today when I got hungry)
25 Pretzel Sticks, 52 cal

Total Calories Today SO FAR... I'll probably have a snack of some kind tonight since I still have a lot of calories left today.  I'm thinking chicken broth (very filling) and zucchini.:  912 Calories

BMR CALC: 1821-(912+100) Cal for random snitching = 809 Deficit (Still feeling a bit hungry between meals but I know from experience this gets better after about two weeks.)

I also did an ab workout last night and will do the same tonight.  Someday very soon I'll be adding working out to my plan to keep things moving.

Parchment Paper is a great way to roast veggies without using any fat.  It won't stick and they will taste yummy!
