Shelley: Day 4 - Eat the Insides!
So, another day of what my family calls "nuke" and vomit. We call it nuke thanks to my oh so wise brother-in-law. When he was little he used to make up words. One day he came out of the bathroom and said, "I nuked." Everyone asked what he meant and he said, "I nuked, makes you have a sick bum.". Since then, we've all referred to this particular malady as nuke. So there was lots of nuking at our house today. I'm seriously going to have to invest in Lysol with the rate at which I am using their products.
I finally dragged all of my children to the gym thinking the worst was behind us (no pun intended) and W had diarrhea and we had to throw his clothes away. I managed to run about 3.5 miles before getting called away but such is life with three very little kids. As I have no time for anything, I bought chicken and squash (yellow and zuchinni) to grill for dinner tonight. It's one of the simpliest and fastest healthy dinners I know how to make.

TODAY'S TIP: EAT THE INSIDES!
As a snack today I stopped by Lone Star Taqueria (I like the calorie content of their chicken tacos) and grabbed a taco so I could weigh the filling. It turns out there's about 2oz of chicken in each taco (I got two for comparative purposes). After examining the chicken I'm pretty sure it's mostly thigh meat so I did the math and came up with a calorie count for the contents.
Generally, street tacos come with two corn tortillas (lean to love corn tortillas, they have 60 cals instead of the 150 of their flour brethren). In the past I've just used one tortilla and tossed the other one to save myself the extra 60 cals. But today, it occurred to me, I don't LOVE the corn tortilla, and I'd much rather have two cups of Skinny Pop later today so why not, EAT THE INSIDES?? So this is what I did, I ate the chicken (there was a little onion and cilantro as well but nothing to speak of) and tossed the rest. I got some great protein which helped me fill up and it tasted fantastic. YUM. So the next time you eat something, consider the parts you love most and toss the rest. This advice is good for all kids of things, hamburgers, samies, dim sum, pot stickers, etc. Much of the time, the majority of the calories comes from the covering. Something, I'd rather exchange for Skinny Pop as I am a volume kind of girl.
