Home Made Pad Thai - Just Because it Looked Pretty and Tasted Great!
So it's no secret that I rely heavily on the Everyday Food Cooking Light Cookbook. This is the Pad Thai. It was so yummy. I did drown it in cilantro (because I LOVE cilantro and it's practically calorie free and adds volume). It ended up being super tasty. The only issue I had was locating the right noodles. I had a hard time finding un-prepared Pad Thai noodles so I had to guess on the ounce-age. I"m going to order some online for next time. It was crazy easy and fast. I added a chicken breast that I grilled (four minutes on each side seasoned with S&P(Salt and Pepper), Onion Powder, a dab of soy sauce, and garlic powder. A quick spray of Pam Olive Oil so it wouldn't stick to the grill and PRESTO, yummy chicken.
This meal took me about 20 minutes and one pan. Just my kind of meal.
